I’m kicking of the countdown to Christmas here on the Eats Amazing blog with a fun festive fajita recipe today! Fajitas might not be the first thing you think of when it comes to Christmas food, but my fun and creative spin on this classic family meal is perfect for family friendly party food and dinner parties from the run up to Christmas right through to the New Year.

It has a simple child friendly marinade that’s mild enough for little ones but still packed full of flavour so the whole family can enjoy it. Even my fussiest little one loves this fajita recipe!

I was challenged to create this recipe by Primula, producers of easy squeezy cheese that’s perfect for adding to all sorts of recipes. I was sent a selection of products to try and decided that the cheese with chives was the perfect partner for these yummy festive fajitas. I’m loving the new cute Christmas packaging too, keep your eyes peeled for them in the supermarkets now!

I’ve used turkey instead of chicken (great for using up leftovers after your Christmas dinner!) and with a simple trick I’ll show you how to turn your fajitas into fun edible Christmas crackers that will impress everyone you serve them to!

Christmas Cracker Festive Turkey Fajitas

Ingredients (serves 4): 

  • 3 garlic cloves
  • small bunch fresh coriander
  • zest and juice of 1 lime
  • 2 Tbsp ground cumin
  • 1 heaped tsp smoked paprika
  • 2 Tbsp vegetable oil
  • 1 Tbsp white wine vinegar
  • pinch salt
  • 3 turkey breast steaks
  • 1 large onion
  • 1 green pepper
  • 1 red pepper

To serve: 

  • 6-8 tortilla wraps
  • 1 tube Primula cheese with chives
  • handful baby spinach leaves
  • 1/2 red pepper
  • Colourful butchers twine or other food safe string.

Method: 

Peel the garlic cloves and place in a small food processor or blender with the coriander (leaves and stalks). Whizz together until finely chopped.

Add the lime zest, lime juice, cumin, paprika, 1 Tbsp of the vegetable oil, the white wine vinegar and salt. Whizz together again until you have a thick marinade.

Slice the turkey breast steaks into thin strips. place in a shallow bowl or dish and pour over the marinde. Mix with a spoon until the turkey strips are completely coated in the marinade then cover and place in the fridge for at least 30 minutes to soak up the flavours.

Meanwhile, peel and slice the onion, deseed the red and green peppers and cut into thin strips.

Heat the remaining vegetable oil to a medium heat in a large frying pan. Add the marinated turkey strips and stir-fry for a couple of minutes until starting to brown. Add the onion and peppers to the pan and continue to stir-fry until the turkey and vegetables are cooked through.

Heat the tortilla wraps according to pack instructions.

Squeeze a swirl of Primula cheese with chives over each tortilla wrap then spread it over the wrap with a knife.

Place a small handful of spinach leaves in the centre of each wrap. Top with a large spoonful of the cooked turkey, onion and peppers.

Keeping the fillings in the middle of each wrap, roll up firmly and place edge side down.

Tie up the ends of each wrap so that they resemble Christmas crackers. Decorate each Christmas cracker wrap with a star cut from red pepper.

Serve immediately and enjoy!
