Easy Pad Thai Recipe (serves 3-4) in 15 minutes:
Soak Packaged Rice (or Brown Rice) Noodles in hot water for 5 minutes. Drain and set aside

Thai Noodle Sauce:
1 tbsp Tamarind Paste
3 tbsp fish sauce
3 tbsp brown sugar
1/4 cup water

mix until sugar dissolves.

On a cooktop (preferably gas) use a wok or cast iron pan.

Heat up 2 tbsp heat-safe oil
1 sliced chicken thigh
2 tsp fish sauce

fry until cooked, then toss
1/2 chopped onion
2 cloves minced garlic
1/2 block cubed tofu

cook another couple minutes

add noodles and sauce. Mix constantly so noodles don’t stick. When they get sticky add
2 cups bean sprouts
2 chopped green onions

Make a well in the wok, add 2 eggs, mix and scramble.

Serve with chopped peanuts, chili garlic sauce, cilantro, and lime
