This delicious sandwich cake (voileipäkakku) is present in all big celebrations in Finland. I want to share my simple and easy recipe to this traditional Scandinavian delicacy 🙂

(makes about 12 pieces)

200-250g cooked ham (ham)
10-15 small gherkins
1 red pepper (or how I wrote it wrong in the video paprika 😀 )
5-7 spring onions (I used only the white parts)
4 large hard boiled eggs
200g soured cream or creme fraiche
300g cream cheese (I used one with herbs, you can also use with garlic or chives)
3 big tablespoonfuls of mayonnaise
black pepper

15 slices of wholemeal toast American style
300g cream cheese (I used one with herbs, you can also use with garlic or chives)
2 big tablespoonfuls of mayonnaise

Start by cutting all the ingredients for the filling and mixing them all together. Then add 200g soured cream, 300g of cream cheese and 3 tablespoonfuls of mayonnaise. Mix well until everything is well combined.Then season with salt and black pepper and mix well again.

Take a serving plate (35x25cm) or cover a cutting board with aluminium foil like I did. Lay three pieces of toast on serving plate side by side and spread over a thin layer of the filling (about 4-5 tablespoons). You can spread the filling with a knife so it spreads evenly. Next cover the first layer with another three pieces of toast. Repeat until you have made all the layers. Please remember the top layer does not need to be covered with filling. Now cover the cake with cling film and refrigerate overnight or for at least 5-6 hours.

Prepare the “icing” by mixing 300g cream cheese and 2 tablespoons of mayonnaise. Mix well until you get a nice spreadable consistency. Cover the cake with the “icing” (like shown in the video).

Make decorations from cucumber, tomato and spring onion (instructions in video) and decorate the cake.

Serve chilled. Enjoy! 🙂
