Greek Moussaka – Meatless, Vegan & Homemade | PlantBased Recipe Ideas

Here’s a delicious and healthy vegan or vegetarian Greek Moussaka, perfect for dinner. It’s already an all time favourite with the family and friends. The kids are guaranteed to love it!

It’s easy to make, it just takes a little time to make all the layers in your oven tray.

It’s a plantbased meatless moussaka. So instead of mince beef, we’ll make a mushroom and sweet potato stew. And instead of using milk and egg yolks in our silky bechamel sauce, we’ll use almond milk and chickpea water. Get ready to truly veganize this Greek classic recipe!

In terms of food, the rock stars in this dish are thyme, potatoes, aubergines and courgettes. For those of you who are in the US, those are eggplant and zucchini.

The thyme goes soooo well with the rustic vegetables we’ve used. The bechamel is nice and creamy without having used any milk, butter or eggs. It’s all healthy food, respecting veganism. Note that, with the cheese on top, it’s suitable for vegetarians.
