Chinese Crispy Chicken Leg Recipe (Chinese Fried Chicken Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

A flavoursome, crispy yet tender chicken dish. you will love it – even your kids!

Ingredients:
8 chicken drumsticks
1-inch ginger root
4 spring onions
5 cloves garlic
3 tablespoons sugar
1 teaspoon red peppercorn
1 Star anise
2 tablespoons Chinese 5 spice
4 tablespoons dark soy sauce

Method:
Slice the ginger…and the garlic
Place on a dish with the spring onions for later

And now, you’re ready to start cooking

Place chicken drumsticks in a pan
Add the ginger, garlic and spring onions
Add the red peppercorn, star anise, Chinese 5 spice, sugar…soy sauce and salt to your taste
Add 1 litre of water
Stir ingredients together
Bring to the boil for 2 minutes
Place a lid on the pan
Turn heat to medium and continue to boil for 30 minutes till chicken is tender

Remove chicken from the pan onto a dish to drain

Heat 1 litre of cooking oil in the wok until hot
Test oil temperature with the end of chopsticks – if they bubbling then the oil has reached its ideal temperature
Place drumsticks in the hot oil one at the time
Fry for 3 to 5 minutes until golden
Remove from oil and drain
Transfer onto a dish, garnish and serve
